Vegan Ceviche

Don’t we all wish we could have shell fish everyday without worrying about cholesterol? Well now you can have the same refreshing effect of ceviche without worrying about the amounts of cholesterol we are consuming. This vegan ceviche is so delicious you will not believe it does not have shrimp/fish in it. How good is it? Do a blindfold test with your loved ones and see if they can guess this dish doesn’t have shell fish. Enjoy comadres.

You can have as much as you like of the ceviche mix as your veggie serving. It is limitless!

Ingredients

  1. 1 cauliflower head (veggie)
  2. 1/2 cilantro bunch
  3. 1/2 purple onion (veggie)
  4. 1 cucumber (veggie)
  5. 2 roma tomatoes (veggie)
  6. 1 jalapeno (veggie)
  7. 2 lemons
  8. 1 orange or 1 mandarin/tangerine
  9. 1/2 bag of chopped carrots (veggie)
  10. Salt
  11. Tostadas (optional and would count as carbs)

Notes

If your meal requires you to have a carb you can get creative and make 2 tostadas (or even 4 if its a double serving of carbs) or even tacos. If your meal also requires you to add a fat use your favorite fat serving. I topped mine with avocado and that counted as my fat serving. Now let’s say you want to have this as your veggies (as much as you like on the side) and your meal requires you to have a protein, well go ahead and pair it up with your favorite protein. Get creative!

Instructions

Once your cauliflower is ready you will drain and set aside. Keep in mind you dont want to boil for too Long because you dont want it to become very soft. You want it to remain crunchy.

You will then chop your cucumber, 1/2 purple onion ( I like mine sliced), jalapeño, and tomatoes. You will then add 1/2 bad of chopped carrots and squeeze your lemons and orange and mix.

As you can see I used only 1/2 of my cilantro bunch. I used the upper part of the cilantro. You will chop and add to your ceviche. Last but not least add salt to taste.
