I am that person that plays it safe with the ingredients I know but ive decided to venture off a little and experiment with rosemary and let me tell you this rosemary chicken is so tasty and very tangy. The fact of being able to eat the leanest part of a chicken breast and have it taste to flavorful and juicy is a major win. Enjoy this dish!

  1. 4 chicken breast
  2. Rosemary
  3. 5 limes
  4. Lime zest from limes
  5. 1/4 cup olive oil
  6. Salt
  7. Pepper

  • 1 bag of sugar snap peas
  • 1 cauliflower head
  • Small box of mushrooms
  • Olive oil
  • 4 garlic cloves or 1 tablespoon of minced garlic
  • Jasmine rice or rice of choice

You will get your chicken breast, cut the extra little pieces of fat, and then cut into cube size and put in a large bowl. You will then season your chicken with salt and pepper. Be mindful with your salt

You will get 1/4 cup of olive oil and add to your chicken

You will then chop 1/8 cup of rosemary and add to your chicken

You will squeeze 5 lime juice to your chicken

Next you will zest 1/2 of your lime and add zest to your chicken. After you add your zest, you will cover your chicken and let it sit in fridge for at least 1 hour or even overnight. The more it marinades the better.

After a couple of hours or a full day you will get your chicken breast and add to your pan. You dont add any oil or non stick spray to your pan because the chicken already has olive oil.

When you add the chicken to your pan, DO NOT ADD THE EXTRA JUICE to your pan. Literally take out the chicken and put in pan. You will discard the extra juice from the bowl.

While your chicken cooks you will chop your mushrooms and your cauliflower.

You will get your minced garlic and add to your pan with 1 tablespoon of olive oil and add your mushrooms and sauté for about 2 minutes. Dont stop moving your mushrooms.

After about 2 minutes you will add the rest of your veggies to your pan.

After about 10 minutes on medium heat, your chicken should be ready. To make sure your chicken is ready cut one in half and make sure its not pink in the middle. As you can see in the picture above there is extra oil on the pan, this is why we dont add extra oil or non stick spray when we begin to cook our chicken.

You can then get your carb of choice and cook. I decided to use jasmine rice. I used 1 cup of uncooked rice and it fed my entire family. Once your rice is done cooking, you can serve yourself your plate.
