I know presentation is key but man this presentation makes you want to eat the baked taquitos even more. This recipe and presentation brings back so many memories from when I travel to Mexico. The flavors are to die for and each crunchy bite will have you seriously wondering how this is healthy.

Ingredients
Corn tortillas
Cheese of choice (I used fresco)
14 Tomatillos
2 jalapeños
1 Cucumber
1 Iceberg lettuce
3 garlic cloves
Small piece of onion
Salt
Water
Non-stick spray
Light sour cream (optional)

Instructions
First you will warm up your corn tortillas and set them aside. You will then get your cheese ( I used an entire queso fresco) and you will chop it in thin slices. You will also add non-stick spray to your bake wear.
You will then get your warm tortillas add 2 pieces of cheese then roll them up and add to your bake wear.
With the entire queso fresco I was able to make 20 taquitos. You will then drizzle a little bit of oil of choice to the top of the taquitos and bake at 400 degrees for 25-30 minutes.
In the meantime you will get your tomatillos and jalapeños and you will boil until they get very nice and soft.
You will then add them to your blender with 2 cups of the water you used to boil your ingredients, 3 garlic cloves, small piece of onion, and salt. Be mindful with your salt… ALWAYS.
This is what your salsa will look like and you will set aside.
You will then peel and chop your cucumber into small pieces and you will also chop your iceberg lettuce.
This is how both of my ingredients look after I chop them both.
After about 25 minutes the taquitos will be ready. Wait for them to cool and serve yourself your cup. Here is the order how I add all the ingredients to the cup. Taquitos, lettuce, cucumber, salsa, light sour cream.
