This recipe will have your belly feeling full and conscious guilt free. The baked taquitos give this dish live and the lettuce gives the dish freshness. Enjoy :) Side note: I drench the shit out my dish with salsa.. hope you do too

Ingredients
15 tomatillos
2 jalapenos
1 garlic clove
1 1/2 white onion
2 cups of water
2 chicken breast
2 roma tomates
corn tortillas
lettuce
queso fresco
cucumbers
salt
garlic powder
oregano powder
non-stick spray
vegetable oil or oil of choice

Instructions
To make our delicious salsita you will boil your 15 tomatillos, 2 jalapeños, and 1/2 white onion. Once your tomatillos and very soft and ripe you will add all of the ingredients (tomatillos, jalapeños, and onion) to blender with 1 garlic clove, 1 cup of water from the pot you used to boil your ingredients, and salt to taste. You will then set aside
Next you will boil 2 chicken breast with 1/2 white onion. You will notice as your chicken breast cooks it will release white foam. Make sure you take out that white foam do not leave in pot. About 15-20 minutes later you will take out your chicken breast and shred and set aside. You will dispose of water and 1/2 white onion.
You will then chop 2 Roma tomatoes and 1/2 white onion and you will add to a pan with 1-2 tablespoons of vegetable oil. Once your onion is nice and translucent you will add your chicken breast and saute as well.*you can also use this chicken mix as meal prep: You can cook your future protein this way for following days/weeks to come.
Once your chicken has sauté for about 5 minutes you will season with ground oregano, garlic powder, and salt. You will season to taste. I usually add more oregano powder than the other 2 seasonings.
Once your chicken mix is ready you will begin to warm up your corn tortillas. Your tortillas can be yellow or white and any brand just NOT homemade. You will then add about 2 spoonfuls of chicken mix to your tortillas and you roll. Once you have your taquitos ready you will add non stick spray to your bakeware and transfer over taquitos.Once you added you taquitos you will once again spray the top of your taquitos with non-stick spray and you will bake at 350 for 10-15 minute (all depending how crispy you like them so make sure you check every 5 minutes).*You do not cover taquitos with aluminum foil.
Taquitos are ready and we just need to serve. You can make many more taquitos but this was a one time meal for me and my family BUT you can make much more because you will have a lot of chicken breast left over OR your can use that chicken mix for meal prep.
