Stuffed Calabacitas

When traveling to Oaxaca I quickly learned that calabacita can be cooked in multiple ways... I mean multiple simple ways that make the dishes enjoyable to every single bite. One of the recipes that truly captured my attention was stuffed calabacitas because of its simple process and its deliciousness. The biggest difference is that in Oaxaca they have the cutest little round calabacitas and they used quesillo instead of panela but you will still love 100 with these ingredients.. The best part of learning how to make this recipe is seeing my daughters enjoy the dish as much as I do. I hope you do too!

Ingredients

  1. 6 calabacitas (carbs)
  2. 1 queso panela (cheese)
  3. 4 roma tomatoes 
  4. 3 garlic cloves
  5. ½ white onion
  6. 5 cups of water
  7. Consume/salt (optional)

Instructions

These are the main ingredients to this dish. The only things that are missing in this picture are the toothpicks and chicken consume/salt. You want to make sure you wash all of your ingredients before cutting and cooking, especially the calabacitas because they tend to have dirt stuck to their skin.  

This picture shows you a process from cutting to stuffing the calabacitas. First you will wash and cut the ends of your calabacitas. You will then cut a long rectangular piece off and scoop the insides  and dispose. When you cut your rectangular piece make sure you cut at an angle (inside) so you can easily take off the top piece. You will then get your queso panela, cut into pieces, and stuff your calabacitas. Once you have stuffed them you will pin them down with toothpicks and set aside. Keep in mind one entire queso panela will stuff 6 calabacitas. 

Next you will get your 4 roma tomatoes, ½ white onion, 3 garlic cloves, and 5 cups of water and blend until the mix has no chunks to it. 

You will then get your pan/skillet and put on high and transfer over your stuffed calabacitas. You then add your tomato mix and add some salt/consume for extra flavor. Once your salsa begins to boil you will set on low/simmer and cook for 10 minutes. 

And just like that you have your amazing stuffed calabacitas. As you can see I added ½ cup of steamed rice to my plate. I am using my rice as my plant-based protein serving and that completes my meal. Enjoy!
