There is something about chipotle sauce that makes dishes so flavorful and delicious. What I love about Chipotle peppers in adobo sauce is that they are ready to go and have so many uses to them especially with chicken. I hope you enjoy this Chipotle chicken recipe.

You can have 4 cups of this mix and it will count as your veggie, protein, and carb serving :)
Ingredients
2 zucchini (or calabaza)
2 broccoli crowns (or 2 cauliflowers)
1 bag of small carrots
1 white onion
Minced garlic or 4 garlic cloves
2 roma tomatoes
4 chicken breast
2 mini chipotle pepper cans or 1 large one
1 cup of chicken broth from boiled chicken
salt/consume

Here is an image of the ingredients I used.
You will chop your 4 chicken breast and add to a large pot of boiling water. You will also add 1/2 of your white onion to the boiling water with some salt. As your chicken begins to cook make sure you take out some of that white foam that will come out of the chicken.
As your chicken breasts cooks you can was and cut all of your veggies and set aside.
You will then get your 2 roma tomatoes, 1/2 white onion, 4 garlic cloves, and 3 cups of water and add to your blender.
Once your salsa is ready you will set aside.
Once your chicken breast is cooked you will drain (save 1 cup of chicken broth), add back to pot (pot is on medium heat), and add 1-2 tablespoons of minced garlic. I personally add 4 because I love garlic and and the health benefits from it.
You can also add a little bit of salt/consume for flavor. Just be mindful. Keep in mind you can always add your own personal sprinkle of salt to your plate when you eat.
Next add your veggies to your large pot and stir around for about 2 minutes.
Next add your chipotle sauce and your 1 cup of chicken broth to your mix. You will cover and put on low/simmer for about 5 minutes.
