Enchiladas Empapeladas

Enchiladas are a staple in my house. We have them at least once a week without ever feeling guilty about them. What I love about enchiladas is that there are so many ways to make them starting from sauce, filling, and process in making them. These Enchiladas Empapeladas will have you and your family asking for more and the best part? You don't have to wash dishes once you are done. You just throw the aluminum foil away.

Depending on the tortilla you purchase you can have 3-4 enchiladas per serving

Ingredients

  1. Boiled shredded chicken (protein)
  2. Universal Salsa (see salsa recipes)
  3. Corn Tortillas (carb)
  4. Queso fresco or other cheese (fat)
  5. Light Sour Cream (fat)

Notes

Keep in mind the lower the carbs are in the tortillas the more you can have. Just don't go over 30 grams of carbs per serving. This will count as your fat, carb, and protein serving. If your meal requires a veggie add your servings.

You will warm up your tortillas and dip into your Universal Salsa. You will then put on your plate and fill with shredded chicken and crumble some cheese inside.

You will repeat the process until you have 3-4 made. Once your enchiladas are make you will transfer over to your aluminum foil and then drizzle more green sauce on them. Make sure you bend the sides up so it creates a plate figure. You will then put them in the over at 350 for 5 minutes

Look how tasty these Enchiladas look. The aluminum foil makes the experience that much tastier so make sure you eat out of the aluminum foil. Don't forget to drizzle some light sour cream to your enchiladas before eating.
