This is a beautiful simple recipe from me to you. Delicious, easy, and healthy! This Pollo en Chile Colorado is a staple in my home and I make it at least once a month because the demand is high. The best part is that it counts only as your protein so you have so many options to pair this dish with. Let the aroma of the blended chiles take you away!
Ingredients
- 4 chicken breasts (protein)
- 3 chile pasillas ( take seeds out and wash)
- 3 chile anchos (take seeds out and wash)
- 4 chile guajillos (take seeds out and wash)
- 4 garlic cloves
- Avocado Oil

These are your main ingredients for this recipe. You can use any non-stick spray of choice to cook your chicken. Also if you don't want your salsa to be too dark take one of the chile anchos out of the recipe. What is not in this picture are the garlic cloves and salt/consume.

You will wash and take out the seeds of all of your chiles and soak them in hot water for ten minutes.

Once your chiles have soaked you will add them to a blender with your 4 garlic cloves and water. I added about 6-8 cups of water to the blender. The less water the thicker so add the water you want for your desired consistency. You will set aside.

Next cut your chicken breast in small pieces and add to your pan with non-stick spray. Once it’s fully cooked (crispy look) you will add your salsa. When you add your salsa you will then add salt/consume to taste. Once it starts to boil you will put it on low and cook for 5 minutes.
