This low carb stuffed chicken will have you really asking yourself if this is healthy because its super delicious. As you can see baked recipes are my life savers because I do not need to be in the kitchen every second while they cook. One of my most favorite parts of this dish is the asparagus because they come out super juicy! I hope you enjoy this dish as much as I do.

4 Chicken breasts

4 roma tomates

So here is an image of all the ingredients you will need. I purchased all of my ingredients from my local grocery store
First you will get our chicken breast and cut out any extra fat we see. You will the butterfly them but make sure not to fillet them because you want to stuff them. As you can see I made slits in the inside part of the chicken breasts because I want the flavors to penetrate deep in the chicken breasts.
You will then season both sides with salt and pepper. Be mindful on the salt and dont add a lot. I suggest adding more pepper than salt to your chicken breasts.
You will then wash and cut the ends of your asparagus preparing them for your stuffed chicken. You will also get your pesto and cheese ready.
Here is how your chicken breasts should look. You will add just a thin layer of pesto to the inside of your chicken breast, as much asparagus as you like and shredded cheese. You will not weight your cheese I want you to learn portions so when grabbing your cheese use about three fingers worth to grab your cheese and add.
Here is how your chicken breasts should look. As you can see I already added the non stick spray to my bake wear before even adding the chicken breasts so they won’t stick. The first chicken breast is only seasoned with salt and stuffed with chicken. That one will be for my daughter since she doesn’t like asparagus nor pepper.
Next you will get your pesto and add another thin layer to the top and grad 2 of your Roma tomatoes, slice them, and add them on top as well.
You will have 2 Roma tomatoes left over and asparagus so slice the Roma tomatoes and add them to the sides of the chicken breasts as well with your asparagus. This helps keep your chicken breasts juicy.
You will then cover with aluminum foil and bake at 425 for 35-40 minutes.
