When you make these shrimp tacos you can have up to 4 tacos (double up the jicama tortilla) since literally each slice has less than 3 carbs per serving. You can have this on a cheat meal or can replace the shrimp with another lean white and have whenever you like.

Ingredients

  1. 1 pound raw shrimp (or 2 if cooking for a bigger family)
  2. Purple cabbage
  3. Purple onion
  4. Jicama tortillas or corn tortillas
  5. olive oil
  6. 5 limes
  7. Paprika
  8. Salt
  9. Cumin powder
  10. Garlic Powder
  11. Onion Powder

You will wash your raw shrimp, add to a bowl, and add all the seasonings, 1 tablespoon of olive oil, and 1 lime juice. As you can see I added a lot of the seasonings BUT I was very mindful on the salt. Add seasonings to taste.

You will then mix all ingredients and you will cover and put shrimp in fridge for at least 30 minutes OR you can overnight them and have them ready for the next day.

You will then chop 1/2 of your cabbage and 1 entire purple onion. You will then add the 4 lime juice and salt (be mindful with salt). You will also cover and chill in fridge for at least 30 minutes OR you can also overnight them. I love love LOVE this slaw because you can also use and treat it as a “veggie” serving throughout the challenge and pair your dishes with this! Its super delicious.

As you can see your shrimps ready. They were ready in less than 5 minutes on high heat. Once they are ready you will set aside and get the rest of your ingredients.
