There is something about hot weather that gives us the craving to eat seafood! This crab ceviche is a great hit because it hits all the spots of our tastebuds! The best part of this recipe is that it is cost efficient, IMITATION CRAB, and family friendly! Enjoy!

You can have 7 ounces of this mix and it will count as your protein and veggies. If you like pair it up with 2 baked tostadas and let it count as your carbs :) Or you can do without the carbs if you like.
Ingredients
2 packs of imitation crab (protein)
4 roma tomatoes (veggies)
2 cucumbers ( veggies)
1/2 cilantro bunch
2 jalapenos (veggies)
6 large limes
salt
1 entire purple onion

You will get your purple onion, cut into 1/2 ring size, add to a bowl, squeeze your 6 limes juices (you want to add enough fresh lime juice until the top of the onions are covered with juice), and add about 1/2 tablespoon of salt. Mix and let them sit in fridge while you prepare the rest of the ingredients.
Next you will get your cucumbers, jalapeños, and tomatoes and chop them up.
You will add them to a large bowl and set aside. Side note: you will not take out the seeds of the jalapeños. You will add them to the bowl.
You will then get your 2 packs of imitation crab, chop, and add to your large bowl.
Then wash 1/2 of your cilantro bunch, chop, and add as well to your large bowl.
You will then get the pickled onions out from the fridge and add to your bowl and mix all ingredients. This is the secret ingredient of this recipe because las cebollitas curtidas is freaken everything to this dish!
