Ok if you love sour enchilosito botanas you are going to freakin love these papas. These papas are seriously one of my most favorite snacks/carbs/meals/EVERYTHING. I'm being honest, you will have one bite and you will literally drink the juice. The juice is heaven and it's delicious. I know you will enjoy it, so just take your time because they go by way too quick. TRUTH: my mouth is watering as i'm typing this!
Ingredients
- 2 bottles of lemon juice
- Small handful of chile puyas
- Small bag of baby potatoes (any color/ Carbs)
- Chicken Consome
- Olive Oil

As you can see this recipe is very simple with minimal ingredients but the flavor is out of this earth. So out of this earth that I make these in bulk for family parties and they are gone because everyone is eating them in a cup! You just need a small grab of dry chile puyas that's it. I forgot to mention in the picture but to lightly fry the chiles you will also need some avocado oil. You need enough lemon juice to cover the potatoes and I find 2 bottles is enough for 1-2 small bags of these baby potatoes.

You will add your lemon juice to a pot and bring to a boil. You will then wash the potatoes and add to your boiling lemon juice. (save at least 1 cup of cold lemon juice)

You will then get your chiles (with seeds) and lightly fry both sides with avocado oil. You just need a drizzle. Once they are lightly fried on both sides you will add to a blender with the cup of lemon juice you saved (cold) and you blend until there are not big pieces of chile in the blender.

You will then add your chile blend to your pot with the potatoes and add consome. Now I want to be honest, you are going to add a BIG amount of consome to your pot. You are going to add until you find your desired taste which to me is literally ½ of the bottle. You will then boil until they are soft enough to stick a knife through and you turn off. You do not need to keep them warm. They are perfectly cold.
