For me personally I love soup year around but we all know once the cold weather hits we crave soup that much more. I love this soup because it is very flavorful and healthy. The pico de Gallo gives it the perfect kick and the cabbage is very fulfilling. You can get as creative as you like and even add a lean white to the soup.

his dish is very healthy and you can have 4-5 cups per serving which is equivalent to a good size bowl and it will count as you veggie serving. If you feel this is enough to have you feeling fulfilled then treat it as a meal

  2. 4-5 strands of cilantro
  3. bag of carrots
  4. 2 zucchini
  5. 2 calabaza
  6. 2 broccoli crown
  7. 1 cauliflower crown
  8. 3 roma tomates
  9. 1 white onion
  10. 1 jalapeno
  11. 1 tablespoon of garlic paste or 2-3 garlic cloves
  12. Salt
  13. Cumin seeds (cominos)

You will boil water in a large pot and add a little bit of salt. You will slice your zucchini, broccoli, cauliflower, and calabaza and you will add it to your pot with your bag of carrots.

While your veggies cook you will chop your Roma tomatoes, jalapeño, and entire onion and you will add to pan with 1 tablespoon of garlic paste or your 2-3 garlic cloves. If you use garlic cloves make sure you drizzle oil to your pico de Gallo while it sautés.
