We all crave pasta, especially if you are on a controlled diet, you can’t resist it. But don’t worry; this healthy pasta will make your tummy as well as your taste buds happy because it is packed with all the good nutrients and heavenly flavors.

Ingredients

  1. wheat/veggie/quinoa Penne Pasta 8oz
  2. Chicken or Turkey Sausage 13 oz
  3. Olive Oil 1 tbsp.
  4. Low sodium Chicken Broth 1 cup
  5. Heavy Cream ½ cup
  6. Parmesan Cheese 4 oz.
  7. Broccoli ½ cup
  8. Onion ½ sliced
  9. Sun Dried Tomato 2 oz.
  10. Tomato Paste/Puree 2 tbsp

Instructions

Boil 8oz of penne pasta and set aside.

Let’s get into the cooking part, starting with the protein dose. Slice 13 oz. Sausages into 1/4" thick rounds, and then set aside. Heat 1 tbsp. extra virgin olive oil in a deep skillet over medium heat. Olive oil is great for your heart.

Add 1/2 finely diced onions and sliced sausage into the skillet; cook and stir often for 5 minutes until fully cooked. Add 2 cloves of minced garlic, 2 oz. sun-dried tomatoes and 2 tbsp. of tomato sauce or puree, to give it a hint of sweetness, cook for another minute while stirring constantly. Combinations of fresh and dried ingredients give a perfect flavor. Dish out on a plate.

It’s time to prepare the best part of pasta, yes! You got it, its sauce. Take 1 cup of chicken broth, and bring it to a boil. Now add ½ cup of heavy cream to add some creaminess to the pasta. Add all the herbs of your choice according to the taste. Black pepper, salt and oregano are a must to enhance the flavors.

Keep stirring and add 2 oz. of freshly grated parmesan cheese. Freshly grated cheese melts quickly while giving the sauce a delicious cheesy texture.

In order to give color to your pasta, add ½ cup sliced broccoli. This fibrous vegetable will provide you with vitamins and antioxidants that have health protective effects. Keep on stirring and sausages which are dished out earlier. Add boiled penne pasta and 2 oz. of grated parmesan cheese. Cook for a while and sprinkle with 2 tbsp. of parsley for a wonderful taste.
