Gluten Free Picadillo

Picadillo is by far one of my most favorite dishes to make with extra lean ground beef but sometimes it tends not to be the healthiest when we add potatoes to it. I have realized that adding garbanzo beans gives it the same effect and consistency of potatoes. This dish is loved by everyone in my household. What I do for my daughter is when the ground beef is done I put some aside for her because the dish can be a little spicy. This way I can give her the ground beef by itself to her or make a taco. Enjoy!

You can have this as a Cheat meal but if you replace the extra lean ground beef with ground turkey you can have 6 ounces and it will count as your protein and carb serving

Ingredients

  • 2 pounds of extra lean ground beef OR ground turkey
  • 2 roma tomates
  • 1 purple/white onion
  • 2 jalapenos
  • 5 garlic cloves
  • 1/2 cilantro bunch
  • 1 can corn
  • 1 can garbanzo beans
  • 1 can tomato sauce (optional)
  • 5 limes (juice)
  • Salt
  • Olive oil or oil of choice
  • Non stick spray

You will chop your Roma tomatoes, onion, jalapeños, garlic cloves. You will then drizzle oil of choice on pan and sauté for about 3 minutes.

After about 3 minutes this is what your mix will look like and you will set aside.

You will then get your 2 pounds of extra lean ground beef and add to your pan with non stick spray.

Once the beef is done you will notice it lets out a lot of juice. You will want to drain that juice from your pan.

Once you drain the juice you will add your two cans of DRAINED corn and garbanzo beans.

You will then add your sauté mix to your pan.

You will then add your can of tomato sauce to your mix. Remember this is optional and to be honest I personally love adding it every time because it makes my picadillo that much juicer and it doesn’t dry out throughout the next couple of days if I want to use it for meal prep.

Last but not least you will add salt to taste. I like to add this step at the end. Remember its ok if your food taste like it needs more salt because each individual can add salt to their liking. You will then cover your mix and put on simmer for 5 minutes.

And here you have your delicious gluten free picadillo mix ladies y comadres! I love to eat it with some tostadas or lets be honest you can serve just like that… oh and it taste freaken amazing you top it with queso fresco! Enjoy.
