Have you ever eaten a quesadilla stuffed with frijoles and said “wow this is so freakin good and HEALTHY?” Most likely not because we know quesadillas can be very unhealthy and high in saturated fat. However this Frijolilla will change your perspective in quesadillas stuffed with frijoles. You will not believe this is a healthy version of a quesadilla and high in protein. Be ready for your taste buds to be blown away. Enjoy
Ingredients
- 1 lb extra lean ground turkey (protein)
- 1 can corn (drained)
- 1 can fat free refried beans (carbs)
- 1 can diced tomatoes
- Shredded Mexican cheese or cheese of choice (fat)
- Low carb tortillas of choice (carb)
- Low sodium taco seasoning
Notes
I know we are only using 1 cup of the ground turkey mix but keep in mind the low carb tortilla, refried beans, and even corn has some grams of protein in them so you are getting a good amount of protein. If your meal requires you to have veggies make sure you add all the veggies you like to your meal. Lets say you want to make this frijolilla but your meal doesn't allow you to have fat then just take out the cheese and make your frijolilla. Get creative.
Instructions

First you will thoroughly cook your extra lean ground turkey. You will then add ⅔ cup of water (recommended by packet of seasoning) and add your low sodium taco seasoning.

You will then immediately add your drained can of corn and your diced tomatoes. Keep in mind you do not drain your dice tomatoes. The juice from the diced tomatoes will keep your ground turkey mix extra juicy and flavorful.

You will then warm up your low carb tortilla and fat free refried beans. When you add your beans to your tortilla, be mindful meaning just add a tad bit and spread it all over your tortilla. These fat free beans go a long way. You will then sprinkle some of your shredded cheese on top of the beans and transfer your tortilla to your comal and add about 1 cup of your ground turkey mix.
