You can have 1 chicken breast and this will count as your protein AND fat serving

Ingredients

  1. 4-6 chicken breast (protein)
  2. Small bag of baby bell pepper or 3 large bell peppers of choice
  3. 1/2 purple onion
  4. 3-5 minced garlic cloves
  5. Large handful of cheese of choice (fat)
  6. Oil of choice (fat)
  7. Low sodium taco seasoning
  8. Non-stick spray
  9. Tooth picks

Notes

If your meal requires you to have a veggie and carb make sure you pick your favorite ingredients and pair your chicken breast. The bell peppers will not count as a veggie serving on this dish because its a very little serving. keep in mind you can’t ever have too many veggies so serve it up!

Here is an ingredient of the ingredients I used. The chicken breast package I bought contains 5 chicken breast but all the ingredients will be enough for 4-6 chicken breasts.

You will chop all of your bell peppers (I chopped the entire bag), 1/2 purple onion, and your 3-5 garlic cloves. You will then drizzle some cooking oil of choice and sauté your veggies.

While you sauté your veggies you will get your chicken breast, cut out the extra little pieces of fats, Butterly them, make little cuts on the inside (I love to do this so the flavor penetrates deeply into the chicken breasts), and you will set aside.

Once your veggies are ready you will place in a large bowl and add a large handful of your favorite shredded cheese and mix and set aside.

You will then get your low sodium taco seasoning ( I got mine at target) and you will sprinkle on the inside of your chicken breast where you made the slices. Do not add more than 1/2 of the package because we will need the rest for later.

You will then get a small handful of your mix and stuff the inside of your chicken breast and seal them shut with your tooth pics. Some of the mix will come out and that is absolutely fine.

Next add non stick spray to your pan and lightly fry both sides of your chicken breast. I cooked each side for about 3 minutes each.

Once you have lightly fried both sides of your chicken breast you will transfer over to your baking sheet. Before you transfer your chicken breast make sure you add non stick spray to your sheet so your chicken breast do not stick. You will then add the remainder of your seasoning to the top of your chicken breast. You do not have to use all of the seasoning. Be as mindful or generous as you like.
Once you have lightly fried both sides of your chicken breast you will transfer over to your baking sheet. Before you transfer your chicken breast make sure you add non stick spray to your sheet so your chicken breast do not stick. You will then add the remainder of your seasoning to the top of your chicken breast. You do not have to use all of the seasoning. Be as mindful or generous as you like.
Seal shut with aluminum foil and bake at 475 for 35 minutes.
