Asian Swai Fish Soup

This soup is super easy, delicious, and family friendly and will have you wanting more and more. Not to mention how this soup will go great with the cold weather. I love to pair this dish with a side of brown rice and well I just dump the serving of rice into my soup and eat away. Cook time? You won’t believe but it will take you less than 30 minutes from start to finish.

Serving

Get yourself a medium bowl and serve yourself as much fish and veggies as you like as well as broth. This will count as your protein and veggie serving

Ingredients

  1. Swai Fish or Fish of choice
  2. Bok choy
  3. Broccolini
  4. Garlic cloves or paste
  5. ginger paste
  6. low sodium chicken broth
  7. Consume (optional)
  8. Olive oil
  9. Brown Rice (optional)

Notes

You can replace the broccolini and book choy with other veggies that you enjoy. Im pretty sure broccoli, carrots, and cauliflower would also taste great!

You will drizzle a tablespoon of vegetable oil to your pan and you will sauté 2-4 garlic cloves or 2 tablespoons of garlic paste and 2 tablespoons of ginger paste. You will sauté for 1 minute until the garlic turns golden brown. DO NOT STOP MOVING IT BECAUSE YOU DONT WANT THE GARLIC NOR GINGER TO BURN.

I also added a dash of consume. Keep in mind this seasoning is optional so the choice is yours.

How much swai did I add? 2 fillet BUT you are more than welcome to add as much as you like especially if you have a big family or want to make extra for meal prep.

I just added it to my instant rice cooker and it was ready in less than 10 minutes. If you dont have a rice cooker, I highly recommend. I got mine at target for 20 bucks.
