Pozole Verde

This pozole recipe is from Michoacan. My grandmother taught me how to make this pozole. Every time I make this dish it brings back so many memories from Mexico and spending time in the ranch where life is slow easy and tranquil. I hope you and your family enjoy this recipe as much as mine does.

Enjoy a good size medium bowl with all the veggies you like such as cabbage, onion, radishes, cucumbers, etc. This will count as your protein, carb, and veggie servings

Ingredients

  1. 6 poblanos
  2. 4 green bell peppers
  3. 18 tomatillos
  4. 1 cilantro bunch
  5. 6 garlic cloves
  6. 4 chicken breast (protein)
  7. Cumin seeds
  8. 1 large can of hominy (carbs)
  9. Onion (optional but would be veggie)
  10. Cabbage (optional but would be veggie)
  11. Consume
  12. Salt
  13. Avocado oil

Here is an image of my ingredients. You will immediately put a large pot with water to boil. You will fill up your pot less than 1/2 ways full.

You will get your chicken breasts, cut into cube size, and add to your boiling water.

You will then chop your tomatillos, chop your poblanos and bell peppers (take out seeds and throw away), peel your garlic cloves, and cut the end of your cilantro bunch.

You will get a handful of each ingredient and add to your blender with 5 cups of water. You will blend for about 3-5 minutes. You will need to repeat this step about 2 more times to blend all of your ingredients because they will all not fit in one blender batch. You will have to use 5 cups of water per blender batch.

You will then add avocado oil to your large pan and add your first batch of mix. Once you repeat the blending of the ingredients above you will add to the pan as well. Meaning you will add your 3 blender batches to this pan.

This is what your mix will look like. You will put on high and wait until the mix begins to boil.

While you mix boils and your chicken cooks you can begin to chop your onion and cabbage.

This is what the cumin seeds will look like and you will then add to your BOILING mix.

You will then add consume and salt to your boiling mix. You add to according to your taste. You will then get your mix and add it to the large pot where your COOKED chicken is in.

Next get your hominy, wash, and clean it. You will then add the clean hominy to a separate bowl.

You will then taste your pozole and if it needs more salt/consume add to your liking but remember to be mindful! You will then cover and put on low for about 5 minutes and your pozole will be ready.
