I have yet to meet someone who does not like Tinga! Tinga is an amazing dish because you can adjust the spiciness and it is very versatile. You can have it by itself pair it with some tortillas or tacos or even un bolillo! Enjoy this simple non-deep fried Tinga Poderosa!
Ingredients
4 chicken breast (protein)
1 small can of chipotle peppers in adobo sauce
4 roma tomatoes
6 garlic cloves
1 white onion
1 purple onion
2 cups of water
3 finger grab: oregano, cumin seeds, salt
Chicken consome (optional)
Non-stick spray

I love to add chicken consume to my boiling water but if you want to replace you can with salt. The less peppers you use the less spicer!
Instructions

Here are the main ingredients for this recipe. I showed the chicken breast already boiled but in the next image you will see how I personally like to boil my chicken breast

This is how I boil my chicken breast so it doesn't take like chicken: I add 1 purple onion cut in half to my boiling water with 4 tablespoons of consome. I then add my chicken breast and boil for 30 minutes and set aside.

You then chop your entire white onion and add to your hot pan. Make sure you use non-stick spray when you sauté your onion. You will cook until they are a nice translucent color.

You will then add your shredded chicken breast and saute with your onions until your chicken gets a nice golden color. You will then set aside

Next get your 4 Roma tomatoes, 6 garlic cloves, entire can of peppers (1-2 if you dont like spicy), 2 cups of water, cumin seeds, oregano, and salt and blend.

You will then add to your mix and put on high. Once it boils you will let it simmer for 5 minutes. And just like that you have your delicious Tinga Poderosa.

This is how I paired my Tinga. I used 3 baked tostadas (carbs), and topped it off with a drizzle of sour cream(fat) and a sprite of queso cotija (fat). Of course I couldn't forget about los chiles en vinagre! The sour cream and cheese with only count as 1 fat serving since it a drizzle and sprinkle of each.
