As requested per my Poderosas I have created a simple, fast, delicious vegan dish. This dish is amazing because you can serve however you like, especially if you have little ones. Personally I add every single ingredient but for those who have picky eaters (like my girls) you can add what they like to their plates. My girls go crazy for the rice and the roasted garbanzo beans. Enjoy this Vegan sheet Poderosas.

Serving

½ cup garbanzo beans, ½ cup of black beans, all the broccoli you like, ½ cup of corn, ½ cup of steamed rice, and drizzle of favorite dressing will count as your carbs, veggies, protein, and fat serving.

Ingredients

  1. 2 cans of Garbanzo beans drained and rinsed (protein)
  2. 1 can of black beans drained and rinsed (protein)
  3. 2 broccoli heads (veggies)
  4. 1 can of corn drained and rinsed (carbs)
  5. 1 cup of rice (carbs)
  6. Dressing (fat)
  7. Olive oil 
  8. Salt
  9. Pepper

Instructions

First and foremost preheat the oven to 475. These are all the core ingredients for this dish. When I steam rice I love to use jasmine rice because it comes out very grainy and non-sticky. I love to use my rice cooker because my rice is ready in less than 10 minutes! Talk about time/life saver. I love this dressing from my local grocery store because it has the perfect kick. You are more than welcome to use any rice or dressing you like. Don't forget to pick your favorite dressing :) let's make this dish extra tasty. 

You will drain and rinse all of your ingredients and add to your sheet. You will drizzle some olive oil on all of your ingredients and season with some salt and pepper. You will then bake at 475 for 15 minutes. While your ingredients are baking you want to get your 1 cup of uncooked rice and add it to your rice cooker so everything can be cooked at the same time and be ready at the same time. 

After 15 minutes this is what your sheet will look like. All ingredients are nice and roasted. If you want to roast them more, keep in the oven for an additional 5 minutes. 

And just like that you have your amazing Vegan plate Poderosas. I highly recommend it. It's truly fulfilling and tasty! I know for serving I have corn and rice as carb serving. You will be fine since this is all plant-based. Enjoy your serving of each ingredient and savor every single bite.
