Tacos Dorados De Frijol

Is it just me or do beans sound good any time of the year? I mean I am going to be honest, I can't go without beans for more than a week. I love them so much because they are so versatile and easy to cook and pair with ingredients. You know what I love about them even more? They are a great source of protein. So I guess I'll continue to eat my frijoles and enjoy every bite because I know I am consuming good amounts of protein. You can have 3 tacos as your carbs, fat, and protein serving. You will also add 4 more spoonful’s of beans on the side to make sure you get a good amount of protein serving for your meal. If you want to make this dish but your meal doesn't allow you to have a fat serving then take out the sour cream.

Ingredients

  1. Corn tortillas (carbs)
  2. Refried canned beans (protein)
  3. 2 tablespoons of light sour cream for 2 tacos (fat)
  4. Non-stick spray
  5. Salsa and pickled onions (optional)

Notes

These fat free refried beans are super delicious. It always seems like anything that is high in fats is super delicious and although these beans are fat free they are seriously incredible

Instructions

First thing is first you will warm up your refried beans and your tortillas. Here is the key to warming up your tortillas so they stay flat when you make your tacos and they don't break. Warm them up enough until they are very soft but not burnt. If they are not warm enough they will break and if they are burnt they will not stay flat when you bake them

You will grab your baking sheet and add non-stick spray to it and then you will then make your tacos. I personally add 2 spoon-fulls of beans to each taco. Once all of your tacos are on the baking sheet you will spray the tacos with non-stick cooking spray so they get nice and crispy. You will then bake them at 375 for 10-15 minutes (or desired crispiness).

After 10-15 minutes the tacos are ready. You can tell that they are nice and crispy by the brown spots they got while baking in the oven
