Sun Dried Tomato Stuffed Chicken

Ok ladies y comadres I cannot be selfish when it comes to bomb healthy recipes. Especially the ones that are so easy to make and give you the effect that you are eating pizza. That is the first thing my husband said when he took his first bite “this tastes like pizza”. That's when I knew it wasn't just my taste buds that were happy. One chicken breast will count as your protein, fat, and veggie serving

Ingredients

  1. 4 chicken breast (protein)
  2. Asparagus (veggies)
  3. Mozzarella cheese (fat)
  4. Sun Dried tomato pesto (fat)
  5. Perfect pinch Italian seasoning 
  6. Salt to taste

Notes

You can add more veggies (asparagus or veggies of choice) on the side.

Instructions

As you can see in the ingredients list we are using two sources of fat (cheese/pesto) but will only be counting it as one because we are only sprinkling some cheese and adding a thin layer to our chicken breast once we begin prepping. I really love the sun dried tomato pesto because that is what will give you the effect that you are eating a pizza. 

Preheat the oven to 400 degrees. Next fillet your chicken breast and add salt. Be very mindful when adding because a light sprinkle will go a long way since the pesto and cheese have salt. You will also add your Italian seasoning. You can add all the seasoning you like since it does not have any salt in the mix. If you look closer I also made little cuts inside the fillet because this allows the juices and flavors to penetrate the chicken breast. 

Next grab your tomato pesto and you will add a very thin layer to the inside of the fillet where the seasonings were added. You just want to add enough where its is covered. 

You will then grab a small amount (about 3 finger grab) of mozzarella and sprinkle.

Last but not least you will add your asparagus to the chicken breast and fold over. 

You will add non-stick spray to your bakeware and add your chicken breast and repeat the same process as the rest of the chicken breast. 

Once all of your stuffed chicken breasts are ready and set  you will add more italian seasoning to the top of the chicken breast, another thin layer of pesto, and sprinkle some more cheese. You can get your leftover asparagus and add to the sides of the bakeware. 

You will then cover with aluminum foil and bake at 400 for 30 minutes.
