Mole

Mole is a delicacy in the Mexican culture. Starting from its variety of ingredients, bold flavors, bold colors, and its numerous ways of making it. Mole is one of my favorite dishes but I was always afraid to make it due to its process and numerous ingredients it takes to make it. Yet here I am making this dish and watching my family enjoy it. I have made the recipe so easy that you will find yourself saying “I was always so intimidated to make it but here I am mastering this amazing complex dish”.

Ingredients

  1. 3 chile mulatos
  2. 8 chile guajillo/cascabel
  3. 4 chile anchos
  4. 2 slices of white bread
  5. 1 yellow/white corn tortilla
  6. 4 saltine crackers
  7. 8 animal crackers
  8. 8 clavos
  9. Small grab of pimienton (pepper corn)
  10. Small grab of cominos (cumin seeds)
  11. 5 garlic cloves
  12. 2 hojas de laurel (bay leaves)
  13. 1 white onion
  14. Big grab of almonds
  15. Big grab of peanuts
  16. 4 chicken breast
  17. 3 tablespoons Consume
  18. Vegetable oil

Notes

The only ingredient you might have trouble finding is the Mulato chile. If you don't find it in any of your local grocery stores just add another 2 chile guajillos/cascabel and 1 chile ancho and you will be fine. You can also replace the 2 slices of white bread with 1 small bolillo. Many like to add ½ a bar of Chocolate Abuelita but to be honest (personal preference) I enjoy my mole non-sweet

Instructions

The first thing you want to do is bring a large pot to a boil and add your 4 chicken breasts with ½ white onion and 4 garlic cloves. You will also add 3 tablespoons of consume to your water. Do not dispose of the chicken broth (water) from boiled chicken because we will need 5 cups worth of it for your mole

While your chicken boils you will warm up some water and devein and take out all of the seeds from all of your chiles. You will then add all of your chiles in the warm water and let them soak for 10 minutes until they get nice and soft.

In a very large pan  you will drizzle some vegetable oil and add your cominos, pimenton, and hojas de laurel and lightly fry for 1 minute. Do not stop moving them. You will then add to your blender

You will then add a little bit more vegetable oil and lightly fry your ½ white onion and your 4 garlic cloves for 2 minutes. You will then add to your blender

Next you will add more vegetable oil and grab a big handful of almonds and peanuts and fry. You want to fry them until they get a nice toasted color. You will toast them for about 3 minutes and you will also add to your blender. 

You will add a little bit more vegetable oil and lightly fry your tortilla, 2 slices of bread, 4 saltine crackers, and 8 animal crackers. You want to fry these ingredients until your 2 slices of bread and tortilla are very stiff. You will then add to your blender. 

Last but not least you will add your soft chiles (DO NOT ADD WATER FROM CHILES) to your blender with 5 cups of the broth from the cooked chicken breast and blend all ingredients for about 5 minutes. 

As you can see this is the consistency your sauce will have. You will then shred your 4 chicken breasts and add your sauce and shredded chicken back to your large pan and put on medium heat. You will stir  your mix around non stop until it starts boiling. You will then turn off the stove and cover. 

Look how delicious your mole looks. You created this so be proud of your mole. I have no doubt this will be a major hit. Enjoy
