6 Anaheim peppers
4 chicken breasts
1 queso fresco
4 roma tomatoes
1 jalapeno
1 purple onion
1/2 cilantro bunch
3 garlic cloves
Salt
Pepper

Here is an image of the ingredients you will need. You can purchase any queso fresco of choice.
You will wash your Anaheim peppers and broil them. Make sure you constantly check on them so they dont burn and make sure when one side of the chiles looks nice and toasty you flip to roast the other side.
In the mean time while your peppers roast you will chop your Roma tomatoes, cilantro, garlic cloves, onion, and ONLY 1/2 of your queso fresco.
This is what your mix will look like and you set aside. if you like you can add a little bit of salt but not too much because you will season your chicken breasts.
Once you have made your pico de Gallo your Chile peppers should be ready and you clean the inside and peel the skin on the outside and you set them aside.
You will then get your chicken breasts, cut out the extra pieces of fat on them, fillet them, and add slices to one side like the picture above. I love to do this so the flavor and juices of the other ingredients penetrate them and they are extra flavorful. You will then season both sides with salt and pepper.
Next get your bake wear and add non stick spray to it. You will then add a layer of pico de Gallo and then add all of your chicken breasts to the top. They will overlap and that is fine!
You will then get all of your Anaheim peppers and layer the top of your fillet chicken breasts.
You then add the rest of your pico de Gallo to your casserole.
You will then get the other half of the queso fresco, thin slice it, and add it to the top of your casserole.
You will then cover and bake at 450 for 40-45 minutes.
After about 45 minutes your casserole is ready.
