Juicy Baked Halibut

I have realized that the leaner the protein the harder it is to keep it juicy. Well this recipe will blow your mind how juicy this fish is after baking it. Its so simple, easy to prep, and family friendly. I also added how I cooked my sides to this dish to show you how simple healthy tasty meals can be. I mean lets be honest sometimes we want easy fast stuff :) Enjoy!

Serving

You can have 4 ounces of halibut and it will count as your protein serving.

Ingredients

  1. 1-2 lbs of halibut (protein)
  2. 1 lemon
  3. 2 tangerines or 1 orange
  4. 2 grapefuit
  5. Lemon pepper seasoning
  6. Vegetable seasoning by McCormick
  7. Asparagus/Cauliflower or your favorite veggies (Veggies)
  8. Jasmine rice (carbs)

Notes

I used 1/2 cup of cooked jasmine rice and it counted as my carb serving. I also added my veggies and this was my veggie serving. If your meal requires a fat make sure you add a fat serving OR if you want to make this dish but a meal wouldn’t require carbs simply take out the carbs and add a lot more veggies to feel full.

Instructions

Here are the ingredients I used for my halibut. First I sprayed non stick spray to my bakeware, added my fish, seasoned with lemon pepper seasoning ( I used a good amount of it), then squeezed 1 lemon/1 grapefruit/2 tangerines. You will then cover with aluminum foil and let it sit in fridge for at least 1 hour. I personally marinated it the night before and baked the next day. The longer it marinades the better it taste.

You will then preheat oven to 450 and bake veggies for 5-10 minutes and halibut for 30 minutes.

While your veggies and fish cook you can make some rice in a rice cooker. if you dont have one I highly recommend one because they are a life saver! I made 1 cup of jasmine rice (adding 2 cups of water) and I just hit that button and it cooks on its own. this made enough rice for my entire family and even left overs. Remember you measure rice cooked when serving as well as your lean whites.
