El Vegano Tacos

Did someone say taco tuesday? Or I mean did someone say tacos everyday? Heck yes you can have healthy tacos everyday without that guilt trip! These Vegano Tacos are everything and more! So simple to make, so amazing to our taste buds, and a major hit to the household. The best part is that all ingredients go in the baking sheet and they are ready at the same time. Only thing you would have to do is warm up your tortillas separately. That's it! I hope you enjoy this recipe as much as I do Poderosa.

Serving

2 well stacked tacos will count as your protein, veggies, and fat (if you use feta cheese or other fat of choice). You can still serve yourself your sides of veggies.

Ingredients

  1. 1  cauliflower head (veggies)
  2. 1 can of garbanzo beans (protein)
  3. 2 bell peppers (veggies)
  4. Corn tortillas (carbs)
  5. Feta cheese optional (fat)
  6. Olive oil drizzle
  7. Salt/pepper (optional)

Instructions

First preheat the oven to 450. When it comes to making these vegan tacos I personally love to use red bell peppers because it gives the tacos a roasted sweet kick to them. I also love to use corn tortillas but you are more than welcome to use any other tortillas of choice as long as the macros fit for your serving. 

You wash and chop your cauliflower and bell peppers and add to your sheet. You will also drain your garbanzo beans and add to your sheet as well. Once your main ingredients are on your sheet you will drizzle with olive oil, salt and pepper (optional) and bake for 20 minutes. 

After 20 minutes your ingredients will be ready. While they cool down you can warm up your tortillas of choice and make your tacos. Add a good sprinkle of feta cheese or replace it with  fat from the food list. Or you can also opt out on the fat sering.
