There is something about Chile del molcajete that is nostalgic. Every time I make this salsa it brings back so many memories growing up in the rancho. My dad was always the one making Chile del molcajete and it was always very delicious. This recipe is his and I hope you enjoy it as much as I do.

  1. 6 tomatillos
  2. 8-12 chiles de arbol
  3. 6 garlic cloves
  4. 1 california/Anaheim chile
  5. Salt or Sal de Grano

Here is an image of the main ingredients. You can use 8-12 Chile de arbor. I personally used 12 because I love my Chile spicy. If you dont want it too spicy I suggest you use 6.

You will get aluminum foil and put on comal/pan and roast your dried chiles and tomatillos. Make sure you constantly move your chiles because they will be done first! Also be ready to cough your lungs out! You want to make sure you roast all sides of the tomatillos until they are nice and roasted.

You will add a small amount of water to your molcajete and you will grind your chiles first to make nice paste.

You will then add your garlic cloves to the molcajete and you will grind them as well. If you dont like garlic I suggest adding 2 garlic cloves.

Last but not least you will add your tomatillos and grind them. Keep in mind with Chile de tomatillo you will not be able to make it a liquid consistency. The Chile will be chunky.
