Personally the hardest part of a health journey is always enjoying lean whites… especially chicken! This is why I love to resort to this recipe because the chicken taste delicious and its juicy. The fact that this recipe is baked makes life that much easier because you prepare in less than 10 minutes it then cooks on its own and while its cooking you can get other things done.

Ingredients
4 chicken breast
low fat ricotta cheese or cheese of choice
spinach
mushrooms
vegetable oil
salt
pepper
tooth picks
non stick spray

Here is an image of the main ingredients you will need for your dish. If you cannot find low fat ricotta its ok just purchase the regular ricotta.
You will add 1 tablespoon of vegetable oil to pan and you will sauté your mushrooms for about 2 minutes.
You will then add a large handful of spinach and sauté as well.
You will know when your veggies are ready when your spinach looks like this. You will then set aside and let veggies cool down.
While your veggies cool down you will get your chicken breast and butterfly them in the middle. Cut through them but now all the way through and you will season both sides with pepper and salt. Be mindful on the salt portion. Once you season all of your chicken breast you will set aside.
Once your veggies have cooled down you will transfer to a bowl and dd 1 cup of ricotta cheese and mix.
You will then stuff the center of your chicken breast with your ricotta mix. How much to add? Eye it out so you have enough mix to stuff your 4 chicken breasts.
Once you have stuffed your chicken breasts, you will pin them down with tooth picks so all of the mix doesn’t come out.
As you can see the mix is a perfect amount for your 4 chicken breast. Keep in mind if you want to make more chicken breasts, then you would simply double your ingredients.
You will then drizzle a little bit of vegetable oil to your pan and you will lightly fry each side for about 2 minutes each side.

Next you will add non stick spray to your bakeware and you will transfer all of your chicken breasts to the bakeware.
You will then put your chicken breast into the oven and cook at 425 degrees for 35-40 minutes. YOU DO NOT COVER YOUR CHICKEN BREASTS.
And here you have your juicy delicious stuffed chicken breasts.
