Tortillas, cheese, and salsa! Yes please every single day of my life. The truth is I don't think I will ever get tired of my tortillas because there are so many ways to make quesadillas and tacos. This recipe I absolutely love because its family friendly and vegetarian! Enjoy the aromas of the bell pepper and onion as they sizzle in avocado oil.
Ingredients
Queso Oaxaca (fat)
1 can of corn (protein)
Corn Tortillas (carbs)
Avocado Oil (fat)
1 purple onion
1 green bell pepper
Notes
You can use any cheese you like. Melting cheese is preferred because its easier to melt and scoop up. As you can see in my main picture I have some red salsita in a bowl. That is a previous recipe! It pairs well with these quesadillas.
Instructions

These are your main ingredients. I have already cut my bell pepper and purple onion to speed up the process. What I love about these quesadillas is that you add everything to your pan and you cook away. This red salsa is seriously everything with these quesadillas. Once again you can find it in a previous recipe or use any salsa recipe that you love.

First you will drizzle some avocado oil to your pan and you will sauté your onion and bell pepper.

Next you will drain your corn and add to your pan.


You will then get your queso oaxaca and rip apart and add to your hot pan. You will continue stirring until it has completely melted. Once you get to this step you begin to warm up your corn tortillas. I used 2 corn tortillas for 1 quesadilla. You will then get a good medium size scoop of your mix and add to your tortillas and make your quesadillas.
