There tends to be a big “ideology” in the Mexican/Latino culture that food without “carne/meat” is not a meal, that we NEED to have carne in order to feel fulfilled and honestly that is not the truth. Of course protein has us feeling fuller but it doesn’t mean we cannot accomplish that full feeling without the meat! This is why I am making it my mission to help you all think outside the box! Enjoy this plant based noodle bowl

1/2 cup of cooked noodles will count as your carb serving. You can add all the veggies you like

  1. 1 can chickpeas
  2. 1 cabbage head
  3. 1 broccoli crown
  4. 1 cauliflower crown
  5. noodles (of choice) measure 1 cup cooked when serving
  6. Asian sauce of choice
  7. Carrots
  8. Avocado

Here is an image of the ingredients I used. I purchased these noodles at Walmart. You can use any noodles that are wheat, quinoa, lentil, plant based.

You will drain you can of chickpeas and chop your broccoli and cauliflower head and add to your bake wear.

You will then add to oven at 375 degrees for about 10 minutes (make sure you are checking up every 5 minutes so they don’t burn/get soggy.

In the mean time while your veggies cook you will boil some water and cook your noodles.

You can also start chopping your cabbage head while your noodles cook and your veggies bake.

After about 10 minutes you will get out your veggies and lather the top of them with your Asian sauce of choice. I personally love this one!

This is how mine looked so then you stick it back in the oven and bake for another 5 minutes at same temperature.

You will then drain your noodles and drizzle a little bit of oil so they do not stick to each other.

What I love to do is make a bed of cabbage. This way I know I am consuming my veggies and not overeating on other ingredients I’m not supposed to. You will then serve yourself your other ingredients.
