Do you all remember that song by Fabulous “Put it in the bag”? Well this recipe is just like that “Just put it in the oveeeen”. That's all you do with this Earthy Frittata and you have yourself an amazing earthy breakfast. The best part about this recipe is that it can last you for 4 days but good luck because if someone in your home gets a taste of the frittata, will only last that day. Enjoy this Earthy Frittata and feel enlightened.
Ingredients
- 16 ounce egg white carton (protein)
- 4 ounce goat cheese or cheese of choice (fat)
- 1 bunch of Asparagus (veggie)
- 1 big handful Spinach (veggie)
- ½ Onion (veggie)
- Non-Stick Spray

Here are my main ingredients. I love love to use goat cheese because it does not easily melt and it's creamy. I mean I'm going to be honest, I love all cheeses and I have yet to find a cheese I dislike. But if you don't like goat cheese you are more than welcome to replace it with anything else. Using the 16 ounce egg whites is very easy for this recipe because all you do is shake and pour.

First you will add some non-stick spray to the skillet and chop your asparagus and onion and saute.

Next you will add your big ASS handful of baby spinach and saute. I say BIG ASS handful because spinach shrinks.

You will then add more non-stick spray and add your egg whites and let them cook for about 2 minutes on the skillet. You will then add your cheese to your skillet and transfer over to your oven and bake at 400 for 20 minutes. NO NEED TO COVER SKILLET.

20 minutes later you have your tasty Earthy Frittata. Enjoy every bite Poderosas. P.S. I personally love to add a lot of cholula to this Frittata.
