I truly consider myself a breakfast person. I will never skip breakfast because lets be honest I go to bed thinking of food and I wake up thinking of food. However there are times when I’m craving breakfast but not wanting to have eggs whatsoever. This breakfast vegetarian quesadilla is so delicious and it hits every spot first thing in the morning. This is also one of my favorite recipes because you still get good amounts of protein without the actual egg product. So lets thank these amazing high protein wraps. Enjoy.
Ingredients
- 1 low carb/high protein wrap (carb but also treat it as a protein)
- Handful of spinach (veggie)
- Handful of mushrooms (veggie)
- ¼ white onion (veggie)
- Small handful of goat cheese or cheese of choice (fat)

Instructions

You will add some non-stick spray to your pan and add your spinach, mushrooms, and white onion. You will sauté until onion is translucent. In the meantime while your veggies cook make sure you are warming up your wrap (I used a comal).
